Erythritol (CAS 149-32-6) is a four-carbon sugar alcohol that occurs naturally in some fruits and fermented foods and is produced commercially by fermentation. It is a white, granular crystalline sweetener roughly 60 to 70 percent as sweet as sugar, with a clean taste and a noticeable cooling sensation as it dissolves. It is heat and pH stable and absorbs little moisture, which helps in baked goods, chocolate, chewing gum and tabletop blends. It is often paired with high-intensity sweeteners such as stevia or monk fruit to round out sweetness.
