Product Information
Trehalose (CAS 99-20-7) is a disaccharide made of two glucose units joined by an alpha 1,1 bond, found naturally in mushrooms, yeast and some plants and insects. Because it is a non-reducing sugar, it does not take part in Maillard browning and stays stable under heat and acidic conditions. It is about 45 percent as sweet as sugar. Manufacturers use it to protect proteins and other sensitive ingredients during drying and storage, to hold moisture, and to soften bitter or off notes in beverages and powders.
