Sodium alginate (CAS 9005-38-3) is the sodium salt of alginic acid, a polysaccharide extracted from the cell walls of brown seaweeds. It dissolves in cold water to form viscous solutions and sets into a gel when it meets calcium ions, the reaction behind spherified foods and many encapsulation techniques.
