Elderberry extract is made from the dark purple berries of Sambucus, a shrub long used in European food and folk tradition for syrups, wines and preserves. The catalog lists 4:1, 10:1 and 50:1 extract ratios; the ratio states how many parts of dried berry go into one part of finished extract. The berries are rich in anthocyanin pigments, which give the extract a deep purple to red color that formulators use in syrups, gummies and drink mixes.
